Soy and Ginger Steamed Fish

This is one of my absolute favorite dishes with mushrooms in it, I could eat this for pretty much every meal. Its warm, hearty, and goes great over rice which soaks up all the incredible juices and broth. When making this I like to use Shiitakes, but as the recipe notes, you can use a wide variety of mushrooms including Enoki and Maitake both of which would give a great crunchy texture. Additionally, I replace the Kombu and Water with homemade dashi which gives it a fishier flavor. The fish is great, but if you are vegetarian, you can replace the fish with more mushrooms and it is still amazing!
